The House Specialty!
This is my favorite food, Chile Verde Pork Stew. 
Everyone makes it differently. 
This one comes from an old family recipe that I love.  
When its done cooking it doesn't last long.

This is the Barbacoa de Rez.

A Mexican  Beef Pot Roast marinated before being wrapped in Banana leaves and baked for hours until 'melt in your mouth fork tender'!

This is an ancient Mayan recipe originating from the Yucatan known as 'Pibil'. 
Made with pork, chicken, or fish the meat is marinated in an Achiote  paste of ground annatto seeds and citrus juices.  Before cooking it is topped with roasted onions, garlic, and chiles, wrapped in banana leaves then steamed.
 

This one is Pollo Pibil made with chicken.
